First, let’s address the elephant in the room. Erewhon (AKA America’s Most Fancy Grocery Store) actually worth the fuss? As a frequent traveler to LA who tends to choose Erewhon as my first stop from the airport, the answer is “it depends.”
If I actually lived in Los Angeles, Erewhon would be do not have It’s not the place you go for your weekly grocery shopping — probably not the place you stock up on school lunch supplies for your kids, toilet paper, or even produce — unless you’re on a budget.
But do you like having a little fun treat at Erewhon when you visit LA? Of course you do. Try the adaptogen lattes, vegan buffalo cauliflower, raw chocolate cake, and best of all, this Probiotic Strawberry Smoothie— I agree 100%. It’s a real pleasure browsing the exclusive healthy menu. Their smoothies have an added bonus over the average smoothie you can make at home.
However, since the majority of us don’t have an Erewhon near us (or we’re not in the mood to pay $20 for a smoothie, seriously!), I decided to try making a copycat version of Erewhon’s Strawberry Probiotic Smoothie at home. After several iterations, I finally came up with a version that packs all the same flavor and nutrition as the original, but at less than half the price.
Here are the ingredients you’ll need to make this smoothie:
- Frozen strawberries
- Fresh strawberries
- Coconut yogurt
- Almond milk
- Collagen Peptides
- Vanilla extract
- date
- ice
Tips for success:
- Choose high quality ingredients: For the best taste, use organic strawberries and high-quality coconut yogurt with live probiotics. Fresh and frozen strawberries create the perfect balance of creamy texture and fresh flavor, while the yogurt adds a tangy, probiotic-rich taste.
- Customize your smoothie: The great thing about this recipe is how versatile it is. Want an extra protein boost? Add a scoop of your favorite plant-based protein powder. Need more veggies in your meal? Add a handful of spinach. It won’t affect the flavor, but it will increase the nutritional value.
- Use frozen strawberries for texture: Fresh strawberries add flavor, but frozen strawberries are essential to give your smoothie a thick, creamy texture without making it watery. If you only have fresh strawberries, add more ice until you reach your desired consistency.
- Naturally Sweet: Medjool dates are great for adding natural sweetness and a subtle caramel flavour. If you prefer your smoothie less sweet, just use one date and adjust to taste.
- Blending correctly: A high-speed blender is your best friend here, helping you achieve the silky smooth texture Erewhon is famous for. If your blender isn’t working for you, try soaking the dates in warm water for 10 minutes before adding them.
Health Benefits of Strawberry Probiotic Smoothie
- Probiotics for Gut Health: Thanks to the coconut yogurt, this smoothie is packed with probiotics that help maintain healthy gut flora, which is important for digestion, immune function, and even mood regulation.
- Antioxidant-rich strawberries: Strawberries are a rich source of antioxidants, including vitamin C, which can help support skin health, boost the immune system, and fight inflammation.
- Protein-rich Collagen Peptides: The addition of collagen peptides promotes healthy hair, skin, nails and joints and is also a great way to get some protein without the added sugars and flavors.
- Natural Energy from Dates: Dates contain natural sugars, dietary fiber and essential minerals like potassium and magnesium, giving you sustained energy without the crash that comes with refined sugars.
- Healthy Fats in Coconut Yogurt: The healthy fats in coconut yogurt will help keep you full while also providing you with medium-chain triglycerides (MCTs), which are great for brain health and metabolism.
