Campari Spritz is a bitter, bubbly drink. It’s a less sweet version of Aperol Spritz. Think of this recipe as a Negroni Spritz. This drink is perfect for aperitivo, a traditional Italian aperitif.

What is Campari?
Campari is an Italian bitter with a citrus taste and aromas of spices such as clove and cinnamon. Campari was created in 1860 and originally used crushed insects to dye the aperitif a vibrant red color. The Campari Group stopped using carmine in 2006.
Compared to Aperol, Campari is less sweet and has a higher alcohol content. Campari has an alcohol content of 20.5-28.5 (depending on where it is sold), while Aperol has an alcohol content of 11. Campari’s stronger taste comes from its less sweetness and higher alcohol content.
Instructions
Pour Campari and Prosecco into a glass filled with ice.
Pour in the carbonated water and stir to combine.
Garnish with an orange slice.
Tips on how to make it
- If you want to sweeten the bitters, add a half ounce of syrup to the drink.
- This is a low alcohol drink, but you can lower the alcohol content even further by substituting sparkling water or sparkling wine for the Prosecco.
- Garnish ideas – herbs, citrus, rhubarb or cherries.
