I love making apple pie from scratch, but when I’m pressed for time, I often “cheat” by using this apple pie filling recipe and a store-bought pie crust. This apple pie filling is a classic made with tart Granny Smith apples, brown sugar, butter, and cinnamon. It’s simple, flavorful, and easy to make.
You can also use this apple pie filling for other baking projects like homemade pop tarts, spooning it over ice cream, filling apple dumplings, etc. Another fun idea is to save this recipe in a big jar and gift it to a friend who doesn’t like baking but will be happy to have most of the work already done for you! LOL.

Peel and core the apples. Dice them into bite-sized cubes.
Heat the sugar, butter, vanilla extract, and cinnamon in a medium saucepan over medium heat until melted. Add the apple pieces to the saucepan and heat for 5 minutes until they begin to soften.
In a small bowl or cup, stir the cornstarch and water together to form a slurry. Pour this into the skillet and heat for 1-2 minutes. The liquid will begin to thicken.
This apple pie filling can be used immediately or cooled and stored in a large jar or another airtight container in the refrigerator for at least 2 weeks.

- If you prefer, you can use a spice mix such as pumpkin pie spice instead of cinnamon.
